Bali Cooking Schools

At the Bali Hilton International in Nusa Dua, learning about Balinese cuisine was as much a cultural experience as a cooking lesson.

During my visit in the 1990s, I filmed Chef Ketur Sukamara, dressed traditionally in a sarong, preparing fish satay—a wonderful demonstration of the ingredients, flavors and cooking techniques of Bali.

I also filmed Wayan Marsa, a master fruit carver, transforming papaya, watermelon, beets and onions into intricate works of art. His extraordinary skill demonstrated how presentation and craftsmanship could turn everyday ingredients into something beautiful.

In the background, the distinctive sounds of Balinese gamelan music complete the scene, capturing much more than a cooking demonstration. The original video preserves the atmosphere of Bali at the time—the food, artistry, music and traditions that made learning to cook there such an unforgettable experience.

Looking back, these moments are a reminder that the cooking schools I visited were never simply about recipes. They offered travelers a doorway into the culture and people behind the food.
